Corn Syrup's Mercury Surprise
Are grape jelly and chocolate milk bad for kids' brains?
If the specter of obesity and diabetes wasn't enough to turn you off high- fructose corn syrup (HFCS), try this: New research suggests that the sweetener could be tainted with mercury, putting millions of children at risk for developmental problems.
In 2004, Renee Dufault, an environmental health researcher at the Food and Drug Administration (FDA), stumbled upon an obscure Environmental Protection Agency report on chemical plants' mercury emissions. Some chemical companies, she learned, make lye by pumping salt through large vats of mercury. Since lye is a key ingredient in making HFCS (it's used to separate corn starch from the kernel), Dufault wondered if mercury might be getting into the ubiquitous sweetener that makes up 1 out of every 10 calories Americans eat.
Dufault sent HFCS samples from three manufacturers that used lye to labs at the University of California-Davis and the National Institute of Standards and Technology. The labs found mercury in most of the samples. In September 2005, Dufault presented her findings to the FDA's center for food safety. She was surprised by what happened next. "I was instructed not to do any more investigation," she recalls. FDA spokeswoman Stephanie Kwisnek says that the agency decided against further investigation because it wasn't convinced "that there was any evidence of a risk."
At first, Dufault was reluctant to pursue the matter. But eventually, she became frustrated enough to try to publish the findings herself. She had her 20 original samples retested; mercury was found in nearly half of them. In January, Dufault and her coauthors—eight scientists from various universities and medical centers—published the findings in the peer-reviewed journal Environmental Health. Although they weren't able to determine what type of mercury was present, they concluded that if it was organic, the most dangerous form, then based on average hfcs consumption, individuals could be ingesting as much as 200 micrograms of the neurotoxin per week—three times more than the amount the fda deems safe for children, pregnant women, women who plan to become pregnant, and nursing mothers.
But the FDA and the Corn Refiners Association, an industry trade group, claim there's nothing to worry about. The group hired ChemRisk, the consulting firm whose scientists testified on behalf of a polluting utility in the lawsuit portrayed in Erin Brockovich, to analyze Dufault's report. ChemRisk criticized Dufault for not specifying the type of mercury her tests had found. This, the consultants said, was key, since mercury poses different risks depending on its chemical form. In its unadulterated elemental state, mercury is relatively safe to ingest—the body absorbs only about a tenth of a percent of it. Inorganic forms of mercury, such as cinnabar, are more easily absorbed and therefore more dangerous than elemental. Organic forms, like methylmercury, which originate from fossil-fuel emissions and build up in the fatty tissue of tuna and other kinds of fish, are the worst; readily absorbed, they can cumulatively damage the brain and nervous system.
Though it provides no scientific evidence to back up this assertion, the FDA says that the mercury in Dufault's HFCS samples is elemental. But the lab that analyzed the samples believes there's a good chance the mercury is organic. The analysts "said in so many words, 'It doesn't look like inorganic,'" says Peter Green, Dufault's UC-Davis colleague who coordinated with the lab. "They would even say it's more likely not the regular elemental mercury."
The corn-syrup industry claims that no HFCS manufacturers currently use mercury-grade lye, though it concedes some used to. (According to the EPA, four plants still use the technology.) It says that its own tests found no traces of mercury in HFCS samples from US manufacturers, including a number of samples from some of the same sources Dufault tested. But hundreds of foreign plants still use mercury to make lye—which may then be used to make foods for export. Already, 11 percent of the sweeteners and candy on the US market are imported.
At around the same time that she published her study, Dufault also learned of a report issued by the Minnesota-based Institute for Agriculture and Trade Policy, which found low levels of mercury in 16 common food products, including certain brands of kid-favored foods, like grape jelly and chocolate milk. Researchers haven't proven that the mercury in the foods came from HFCS, but internist Jane Hightower, who coauthored the Environmental Health study, points out that it ultimately doesn't matter how it got there: The FDA has allegedly known about the mercury-contaminated hfcs for nearly four years and "should already have an answer for us based on science and not speculation," she says. The agency says it has no plans for further testing unless additional evidence of harm emerges in outside scientific literature. But the issue has been getting some attention in Congress—a bill proposed in April would require plants that once employed the technology to report how much mercury they used.
Dufault retired from the FDA in January 2008, after the agency began taking her off her field projects. "All of a sudden, they wanted me to sit in the office," she says. She moved to Hawaii, but she hasn't exactly been lounging on the beach. She recently finished a paper, currently in the peer-review process, that explores why children and fetuses are more sensitive to mercury than adults. She also teaches second- and third-graders with learning disabilities. "I worked for an organization that allowed stuff to go on that probably impacted these children," she says. "I look at this as doing penance."

Digging into it a little further, I see the Amish have 1:15000. Like the Amish, lotsa hill towns have schools full of family farm kids. Who eat much more from their gardens. Many hill towns dont even have fast food outlets, but if you look up their school tests, you see the kids are 1/2 year ahead of the National average, even tho over half the kids get subsidized lunches cause their families are so poor.
This's been going on for a couple generations, so it kinda explains how the voters were stupid enuf to let Bush take power.

I also find it interesting how no matter what subject or how many DECADES it has went on, someone finds it necessary to either blame Bush or by default try link him to it. Interesting article. In my family, HFCS is known as "corn death" because it gives several of us bad reactions. I strongly react to it and also strongly react to thimerosol, a mercury based preservative. It had never occurred to me that there might be a connection between the two reactions. Now it makes sense, in a disturbing kind of way.
FWIW, we have all this HFCS because we're still punishing Cuba for cutting us off from its sugar more than 40 years ago. Maybe it's time to get over it and stop paying 3x the world price for sugar, which would lead to replacement of HFCS with sugar for price reasons. It seems a simple, sane way to solve the problem. HFCS would most likely fade away when the profits were gone -- especially if the US Gov't stopped subsidizing its production.
Right Idea, but some Inaccuracies
This article is inaccurate in a number of ways that make it difficult to read. The lye is purified by the use of liquid mercury as an electrode, not by "pushing salt through big vats of mercury." More like pulling naturally forming lye through a membrane in a huge vat of salt water. Ms. Dufault did not find this fact in a study at the FDA, but rather found indications in historical data and eventually performed a study on her own that confirmed the suspicions raised. (This raw data had little to do with HFCS, but rather production of food-grade lye which she surmised might affect HFCS.) Articles about this said Ms. Dufault wished to publish this paper and have FDA action taken. The FDA demurred and fired her. Fortunately, she did a new study with numerous colleagues (strength in numbers!) and published the paper in:

The lye results as a
The lye results as a by-product of chlorine production. The process is the electrolysis of sodium chloride solution using mercury as a cathode. Sodium is reduced to sodium metal which dissolves in the mercury. The mercury with the dissolved sodium is then treated with water and the sodium reacts with the water to produce sodium hydroxide (lye) and hydrogen gas. The lye formed is quite pure but would be contaminated with traces of mercury metal. It would be very unlikely that any organic mercury compounds would be formed in the process. Nor, would any other compounds of mercury be likely to form. The conditions would be strongly reducing which would tend to keep the mercury as metal.
Sodium hydroxide, lye, is formed also in another chlorine production process free from any mercury. In this process, the sodium hydroxide is formed as sodium hydroxide not sodium metal. But, the lye solution is diluted with much water and also contains much sodium chloride. This sodium hydroxide solution must be concentrated to be generally useful by evaporating much of the excess water but a significant amount of the sodium chloride remains with the sodium hydroxide. How the sodium chloride and possibly lower concentration of lye might affect the use of lye in the HFCS process I do not know. I would doubt that the sodium chlorine contaminant would cause any major problems but the possibly lower lye concentration might be important. On the other hand, it would be free of mercury.

We shouldn't have have to unknowingly expose ourselves and our families to toxins in our national food supply. My personal solution is to eat foods closer to the source. The simpler the better, of course I indulge in foods that I shouldn't eat as well.
Why then does our government hide damaging information. Issues such as mercury in our frosted flakes, mercury in our dental fillings, and in our vaccinations (swine flu vacc anyone?) Above that we also are unknowingly exposing our kids and pets to this. Mercury poisoning is a neurotoxin that unlocks the door to numerous health problems. We are just talking mercury here too. There are toxins in every aspect of our lives today. It is interwoven, almost necessarily into our daily habits. Who would give up their iPhone because it can give them brain cancer?
Our country decided to protect big business before it's people a long time ago. Maybe it's time we demanded a higher moral standard from businesses, and I mean EVERY industry out there. For all businesses; sign an hyppocratic oath stating you seek to do no physical harm to others while going about your business. And she is correct that the process results in a very low rate of mercury contamination in the resulting lye. The problem is that a small (teensy weensy) amount of Hg contamination is unavoidable, and Hg is toxic at levels of a few micrograms per gram. Very, very small concentrations of mercury are still very, very toxic. In fact, some toxicologists argue that NO amount of mercury contamination is safe for infants, children, pregnant women and nursing mothers. That is, there is no micro-level of Hg contamination that can be considered safe for vulnerable members of the population. Fetuses, infants and toddlers who are experiencing normal rapid growth are especially susceptible to neurological damage from small levels of toxins such as mercury. Sadly, most of our toxicological guidelines are formulated for adult bodies and adult metabolisms. It is interesting that many children show the first symptoms of autism between 18 and 24 months, which coincides with a particular period of neurological development associated with language skills. This does in fact suggest that researchers have stumbled upon something very significant in the search for the cause of the autism epidemic -- the rate of autism, like the rate of breast cancer, has been dramatically increasing over the second half of the 20th century, and as a society we cannot ignore this disturbing connection.

Dufault presented such poor evidence that it's no evidence. Is this how you work around this magazine? I've never been here and followed a link on the corn/syrup mercury thing. I prefer some substantiation for my stories.

It’s just about every week that someone dredges up old sweetener myths for another ride on the media’s merry-go-round. This past week we’ve seen quite a few examples involving high fructose corn syrup, also known as corn sugar.
Over the weekend, a University of California-Davis professor was quoted calling for a tax on corn sugar. Last week, guest writers in the Buffalo News called corn sugar “the worst kind of sugar.” A writer in the Chicago Tribune warned parents away from giving “high fructose corn syrup-laden pop” to their kids. And recently, a blogger for Mother Jones rehashed the alleged corn sugar/mercury link. Lastly, the dismissal of a class-action lawsuit over corn sugar labeling was overturned by an appellate court. The suit, originally filed in 2007, claimed that the “All Natural” label on drinks containing corn sugar was misleading.
Given the piles of misinformation, let’s review the reality about corn sugar.
Nutritionally, corn sugar is no different than table sugar. Same sweetness, same caloric content. Even Marion Nestle, no friend of food companies, has stated that corn sugar is "basically no different from table sugar.”
In terms of weight gain, no fewer than five papers in the American Journal of Clinical Nutrition found “no special link between consumption of high-fructose corn syrup and obesity.”
As for the so-called “link” between corn sugar and mercury, the media worked itself into a frenzy over a mercury-in-corn-sugar study in January. But according to the study’s own data (which was questionable enough), you would have to drink 181,797 cans of Coke to be exposed to the same amount of elemental mercury in a single compact fluorescent light bulb. That’s the same size at the period at the end of a sentence.
And lastly, no less than the Food and Drug Administration has called corn sugar “natural.”
In the end: sugar is sugar. Whether it’s table sugar, corn sugar, brown sugar or honey, it can be part of a healthy diet.

The Mercury being present in corn syrup is very alarming. I'm glad I dont ea't alot of sweets. The mercury that is in the vaccine preservatives is extremely toxic as well. Children are given an average of 30 to 40 vaccines. The government is planning forced innoculations of the swine flu which is only a mild flu at best. More people died from the swine flu vaccine in the 70's than the actual flu. Vaccines are known to trigger epidemics as well. The smallpox vaccine which was stopped in the military because it caused loss of eyesight if you touched your eye after scratching the scab, as well as causing full blown small pox. All of these programs the FDA oversee are called soft kill weapons. It is part of a global eugenics program to controll the population. A very American idea. That is where Hitler got his ideas from (US). If you dont believe me, reasearch yourself. Google is a good place to start.
